Banana Bread

List of ingredients:

Organic butter (or olive oil)

Organic eggs (or applesauce)

3 bananas

brown rice flour

cinnamon

salt

baking powder

baking soda

flax seeds, ground

pure vanilla extract

shredded coconut (optional)

Prepare:

Preheat oven to 350 degrees

Melt 1 stick butter in pot on stove on low flame; you can also use oil instead of butter if you are vegan
add 1-2 tsp pure vanilla to melted butter

2 cups brown rice flour
1 cup shredded coconut
1/2 cup freshly ground flax seeds
1 tsp each of: cinnamon, salt, baking powder and baking soda
mix all dry ingredients together

add melted butter (or oil) & vanilla, 2 eggs (or 3/4 cup applesauce if vegan) and 3 mashed bananas to mixed dry ingredients and 1/2 cup maple syrup. Spray a loaf pan with non-stick olive oil spray (I use Spectrum)

Bake for 55-65 minutes. Let cool, slice and serve.
